Muffin Tin Monday - Valentines Fun
Today we made a new favorite for lunch. It is corn dog muffins. We used the mini pups cocktail links from Trader Joe's and corn muffin mix to make to make this simple recipe.
The kids loved them! (And Mommy did too!) The great thing is, it makes enough for another meal that can be warmed up for lunch or even sent to school in your child's lunchbox.
We decided to serve our corn dog muffins with a bit of mixed berries and some sparkling juice. Yum! FYI, I put two mini pups in each muffin. You could probably just slice up a regular hot dog if you didn't have the cocktail wieners on hand.
