Garlic Faux Mashed Potatoes

I was perusing the various recipes I had pinned on Pinterest this week and decided it was time to finally try garlic mashed cauliflower. I had heard of it before, but I was suspicious as to whether it could really replace my beloved mashed potatoes. It seemed like a good way to reduce carbs for my mom who has to watch her blood sugar. And can I just say Wow?! These were so tasty!


The first thing you will want to do is to steam or simmer your cauliflower. I simmered mine at a medium high heat until it was very tender. While it was cooking, I minced a large clove of garlic and sauteed it in 3 TBL of butter. I then measured and set aside 1/4 cups of parmesan (I just used the powdered kind in the plastic bottle 'cause that is all I had on hand.) I also scooped up a rounded tablespoon of whipped cream cheese. After the cauliflower was done steaming, I combined the parmesan, cream cheese, the cauliflower florets, 1/4 tsp of salt and the sauteed garlic and butter in my food processor and pulsed until the mixture was smooth and creamy.


Wow! I must say it again, this was really good! My whole family, with the exception of my picky son who unfortunately found out it was cauliflower, loved it! I was actually surprised how much it tasted like garlic mashed potatoes. I am certain I could make this from now on in place of mashed potatoes and not miss them. I topped mine off with a bit of green onion for color.


Below is an ingredient list for your shopping trip...

1 head of Cauliflower
1/4 cup parmesan
1 rounded TBL whipped cream cheese ( I am sure regular would work fine)
1/4 tsp salt
3 TBL butter
1 large or 2 small cloves of garlic (minced)

  1. I have seen that recipe on Pinterest but have never tried it. You make it sound yummy. When my kiddo was little, I used to sneak a bit of cauliflower into his potatoes. I will have to try this recipe. Thanks for sharing!
